Method

  1. Boil the potatoes in salted water until tender.
  2. Lightly salt the pork slices and fry them slowly without fat in a large pan over medium heat until golden and crisp on both sides – 20–30 minutes depending on thickness. Pour off the fat as you go. Alternatively, bake them on a rack in the oven at 200 °C until crisp.
  3. For the sauce, melt the butter, stir in the flour and cook briefly.
  4. Gradually whisk in the milk and let the sauce simmer gently for a few minutes until creamy.
  5. Season with salt, pepper and nutmeg and stir in the parsley just before serving.
  6. Put the meat, potatoes and sauce on the table separately – everyone helps themselves.

Stegt flæsk med persillesovs is a classic of everyday Danish cooking. In 2014 it was chosen as Denmark's national dish in a nationwide vote organised by the Danish Ministry of Food.
