This recipe stays our little secret

We love to share – recipes, tips and our favourite places on Ærø. Our Graved Lachs Ærø, however, took us many months to develop, refine and taste again and again, and we make it ourselves in our Hamburg manufactory. So this is one recipe we're keeping to ourselves 🙂

You can still taste it, though: Graved Lachs Ærø can be ordered directly from us – as a whole side of about 1.1 kg or as a 300 g piece. And yes: we also deliver to Ærø and throughout Europe with UPS.

The story behind the dish

“Graved” or “gravad” goes back to the Scandinavian word for “buried”: originally fish was buried with salt to preserve it. This old preservation method developed into today's cure of salt, sugar and herbs, which is at home throughout the Nordic countries.

Enjoy it at Dansk Cottage

Jan makes the original creation in his Hamburg manufactory, Hamburger Fischwerker. For us, this salmon brings together everything that matters to us: Hamburg, cooking, sailing and Ærø.

As a small welcome, new guests at Dansk Cottage find a selection of different Graved Lachs flavours from Hamburger Fischwerker in the freezer – along with good beer from Ærø. Perhaps the loveliest start to the first evening on the island.
