Æbleskiver

Æbleskiver are small, round and fluffy puffs baked in a special pan with hemispherical hollows. In Denmark they belong to Advent just as much as mulled wine – served with icing sugar and jam for dipping.

Method

  1. Mix the flour, bicarbonate of soda, cardamom, sugar and salt in a bowl.
  2. Whisk the egg yolks with the buttermilk and stir into the dry ingredients to make a smooth batter. Leave to rest for about 30 minutes.
  3. Whisk the egg whites until stiff and gently fold them into the batter.
  4. Heat the æbleskiver pan and add a little butter or oil to each hollow. Fill the hollows about three-quarters full with batter.
  5. As soon as a crust forms at the edge, turn the balls a quarter turn with a knitting needle or wooden skewer. Keep turning gradually until you have golden spheres all round.
  6. Serve warm with icing sugar and jam.

The story behind the dish

The name recalls their origins: around 1700, æbleskiver still meant slices of apple dipped in flour and egg and fried in butter. The modern form made in the æbleskiver pan is documented from the 19th century – and despite the name, it usually contains no apple at all today.

On Ærø – as on the neighbouring island of Als – there is also a tradition of filling æbleskiver with prunes.
